Ingredients  [ For 2 to 4 people ]    [   Preparation time : 15 minute  –  Cooking time : 20 minutes  ]

For The Crust

  • 1 cup almond meal
  • 2 tablespoons maple syrup
  • 1 tablespoon melted coconut oil
  • 1/4 teaspoon pure almond extract
  • pinch of salt

For The Coconut Filling

  • 1 cup shredded unsweetened coconut
  • 3 tablespoons maple syrup
  • 2 tablespoons coconut oil
  • 1 tablespoon water

For The Chocolate Topping

  • 1/4 cup cocoa powder
  • 1/4 cup melted coconut oil
  • 2 tablespoons maple syrup

Preparation Method

  1. Start by lining a loaf pan with parchment paper.
  2. First prepare the crust by combining the almond meal, maple syrup, coconut oil, extract and salt in a bowl until it forms a sticky dough.
  3. Press it into the bottom of the loaf pan and set aside.
  4. In a bowl mix all the ingredients for the coconut filling before spreading it over the almond crust.
  5. Mix the chocolate topping ingredients with a whisk until it is mixed and pour it over the coconut, carefully spreading it over the entire surface.
  6. Set it in the freezer to firm for about one or two hours.
  7. Pull the parchment paper out to release it from the loaf ban and cut into slices. Serve them directly out of the freezer so they don’t soften.
  8. If you manage to have any leftover you can store them in an airtight container for a few months so you can have Almond Joy bars any time you want.
