Ingredients   [ For 8 to 9 people ]    [   Preparation time : 12 minute  –  Cooking time : 1h15 minutes  ]

  • 4 large baking potatoes
  • 4 tbsp of butter
  • season salt
  • 1 lb bacon, cooked and crumbled
  • 1/3 cup sour cream
  • 1/4 cup chives
  • 1 1/2 cup cheddar cheese, shredded

Preparation Method

  1. preheat the oven to 425 degrees F
  2. scrub the potato skins and poke holes around them using a fork
  3. place in a roasting dish with butter
  4. once the butter has melted roll the potato in the butter to coat all sides.
  5. sprinkle all sides with season salt
  6. roast in the oven for 45 to 60 minutes or until a fork inserted can be pulled out easily
  7. remove from oven and allow to cool
  8. once the potatoes are cool to the touch
  9. slice in half horizontally
  10. carefully scoop out the center leaving a border of potato on the skins
  11. place the scooped out potato into a medium bowl
  12. add the sour cream, bacon crumbles, chives and 1 cup of cheese into the bowl and mix and mash with the potatoes
  13. spoon the mixture back into the potato skins
  14. top with the remaining cheese and place back into the roasting pan
  15. place back into the oven until cheese has melted and the potatoes are warmed through, 15 to 30 minutes
  16. you can top with more sour cream and chives
