Ingredients    [ For 8 to 10 people ]    [   Preparation time : 35 minute  –  Cooking time : 05 minutes  ]

The sponge cake

  • 4 eggs
  • 100g of sugar
  • 50 g flour
  • 30 g almond powder
  • 20 g of cocoa powder

The foams

  • 25 cl liquid cream
  • 100g of dark chocolate
  • 1 sheet of gelatin 3g
  • 25 cl liquid cream
  • 100 g white chocolate
  • A gel sheet of 3 g

The ganache

  • 25 cl liquid cream
  • 80g of milk chocolate
  • A half sheet of gelatin (ie 1.5 g)

Preparation Method

  1. Prepare the cake: Place the egg whites in the snow with the sugar,
  2. add the yolks one by one, mix the flour, the almond powder, and the cocoa powder and then incorporate the little by little.
  3. Spread the preparation on an oven mat (here) or a paper-coated plate, and bake in a preheated oven at 180 ° C for 12 minutes.
  4. Allow cooling.
  5. Dark chocolate mousse: beat 20 cl of cold whole cream until a whipped cream is obtained, heat the 5 cl of remaining cream and then melt the dark chocolate,
  6. add the gelatin sheet ( Softened in cold water for 5 min, and drained) leave to warm and then incorporate into the whipped cream.
  7. Cut a rectangle of sponge cake of the size of the pastry box, (I set it to a minimum), put the cake at the bottom of the frame, then pour over the black chocolate mousse
  8. Store at least 1 hour.
  9. Proceed in the same way for the white chocolate mousse, then pour it over the black chocolate mousse and keep cool for another hour.
  10. Finally, prepare a milk chocolate ganache: heat the cream, melt the milk chocolate, add the half-sheet of softened and softened gelatine, let warm this ganache before pouring it on the last layer.
  11. Place the cake in a cool place for at least 4 hours, preferably overnight
  12. Unmold, (to facilitate demolding, I pass a knife all around, then I remove the circle)
  13. Then decorate at your convenience and present the cake like that or cut it into individual parts, and decorate them with white chocolate sticks
  14. It’s ready.
