Ingredients [ For 4 to 5 people ] [ Preparation time : 15 minute – Cooking time : 15 minutes ]
- 18 open sea urchins
- 2 stalks celery
- 1 red bell pepper
- 100g spinach
- 3 spring onions
- 3 shallots
- 15 cl cream
- 10 cl of white wine
- Olive oil
- Salt and pepper
- Collect urchins in a small sieve and the juice. Cut all the vegetables into small cubes.
- Sauté for 5 minutes in a wok in olive oil, add the juice of sea urchins, the white wine and reduce for 2 minutes.
- Place the vegetables in a colander, recover the cooking juices, add cream and reduce for 2 minutes.
- Put some vegetables in sea urchin shells, arrange on top several languages and cover with cream.
