Ingredients    [ For 4 to 5 people ]    [   Preparation time : 15 minute  –  Cooking time : 15 minutes  ]

  • 18 open sea urchins
  • 2 stalks celery
  • 1 red bell pepper
  • 100g spinach
  • 3 spring onions
  • 3 shallots
  • 15 cl cream
  • 10 cl of white wine
  • Olive oil
  • Salt and pepper

Preparation Method

  1. Collect urchins in a small sieve and the juice. Cut all the vegetables into small cubes.
  2. Sauté for 5 minutes in a wok in olive oil, add the juice of sea urchins, the white wine and reduce for 2 minutes.
  3. Place the vegetables in a colander, recover the cooking juices, add cream and reduce for 2 minutes.
  4. Put some vegetables in sea urchin shells, arrange on top several languages and cover with cream.
