Ingredients    [ For 4 to 5 people ]    [   Preparation time : 15 minute  –  Cooking time : 15 minutes  ]

For the cake

  • 400 g flour
  • 250 g butter at room temperature
  • 400 g sugar
  • 4 eggs
  • 25 cl of coconut milk
  • 1 c. Coffee flavored with natural flavor of vanilla Vahiné
  • 1 pack and half of baking powder

For coconut cream

  • 150 g sugar
  • 230 g of crème fraîche
  • 4 c. Of coconut milk
  • 100 g of Ti ‘coco Vahiné
  • For glazing:
  • 220 g of fresh cheese
  • 100 g butter
  • 450 g icing sugar
  • 2 c. Coconut cream
  • 1/2 c. Coffee
  • 1 c. Coffee flavored with natural flavor of vanilla Vahiné
  • 140 g of Ti ‘coco Vahiné

Preparation Method

Prepare the cake

  1. Preheat oven Th.6 (180 ° C).
  2. Start by buttering and flour 3 cake molds of the same size.
  3. In a salad bowl, beat the butter to make it smooth.
  4. Add the sugar and continue to beat the preparation for 10 min.
  5. Add eggs one by one while mixing.
  6. Add the flour, natural flavor of vanilla Vahine, yeast and coconut milk gradually.
  7. Divide the dough into the 3 molds.
  8. Cook the 3 cakes in the oven for 30 min.
  9. Allow cooling for 10 minutes before unmolding.

Prepare the cream

  1. Mix the sugar, cream, milk and Ti ‘coco Vahiné in a bowl.
  2. Arrange a cake on a plate and cough the surface with the handle of a spoon to spread half of the coconut cream.
  3. Gently lay the second cake and repeat the process (pierce then put the rest of the cream).
  4. Place the third cake.

Prepare the frosting

  1. Beat the cheese and butter until you get a sparkling mixture.
  2. Then gradually add the icing sugar with the coconut cream.
  3. Add the salt and natural flavor of vanilla Vahiné.
  4. Continue beating until mixture is smooth.
  5. Then add 40 g of coconut to finish.
  6. Spread the icing over the whole cake and sprinkle with grated coconut.
  7. Decorate according to your tastes.
