My original Rainbow Pancakes has been quite controversial, but hopefully, that is all done. Pancake, just in time for Easter.

Ingredients    [ For 4 to 6 people ]    [   Preparation time : 17 minute  –  Cooking time : 20 minutes  ]

For The Pancake Batter

  • 50 g cornstarch
  • 50 g flour
  • 20 g caster sugar
  • 1 sachet of vanilla sugar
  • 2 eggs
  • 25 cl of milk
  • 2 c. Of Rum
  • 6 food colors

For Vanilla Cream

  • 800 ml whole fresh cream
  • 150 g of icing sugar
  • 2 coffee with vanilla extract

Preparation Method

For Pancakes

  1. In a bowl whisk eggs with milk.
  2. Sift flour and cornstarch. Add the sugar with the vanilla sugar.
  3. Incorporate in small quantities, stirring vigorously, milk with eggs.
  4. Add the rum and whisk again.
  5. Let stand 15 min at room temperature.
  6. Before cooking your pancakes spread the mixture of pancake batter into 6 different bowls.
  7. Add a food coloring (yellow, blue, green, violet, orange and red) to each bowl.
  8. Melt a little butter on your stove and start cooking.

For Vanilla Cream

  1. Whip the crème fraîche to make it thicken, then gradually add the icing sugar and the vanilla extract.
  2. Once the mix is firm you can start the editing.
  3. For mounting:
  4. In a dish for the service arrange your first crepes of color and cover it with vanilla cream.
  5. Repeat with all the pancakes in order of color to create a rainbow effect.
  6. Once your pancake cake is formed, you can let it rest in a cool place for 15 minutes.
  7. To serve it you can sprinkle it at the last minute of icing sugar and accompany it with a few pots of jams of your choice.
